Victorinox boning knife with a 30 cm blade. Excellent for filleting salmon, pike, and other fish. Both sides of the narrow, flexible blade have oval grooves. This significantly lightens the filleting of, for example, large fatty fish, as air remains in the oval grooves during cutting.
