Japanese kitchen knives are crafted from very hard and thin metal. Therefore, they should not be used for chopping or twisting against hard materials such as frozen or bony meats, coconuts, can lids, etc. There is a risk of chipping the blade. High-quality kitchen knives should also never be washed in a dishwasher; instead, a quick wash with water and drying right after use is recommended. Storage solutions should ensure that the knife blades do not come into contact with other metal objects.
