Traditional fine-grained alder chips for smoking fish and meat. When smoking on a grill, it is good to use a smoking box. The box makes it easier to control the amount of smoke. The box is removed from the grill when the food has smoked enough. If the smoking takes some time, it is better to use slower-burning smoking chunks instead of chips.
