    What a Crazy Capable Smoker!

I bought this back in the Winter of 2014. Over time I have learned and customized it much. The door is a solid stainless door that seals better, the custom charcoal basket is taller to contain more fuel for longer cooks, I've installed a PID controller from Auber Systems to maintain temp remotely, an expanded section for a 3rd grate. I've made smoked turkeys that people picked clean over Thanksgiving, pork shoulders to die for, and brisket so tender it just melts. There's so much you can do with it, the fan base is massive and the support follows. I'd buy the 22" if I did over or when this one wears out. Just make sure you tighten the seals and the air flow control. It's easier to master and get a good result when you do. It's just plain fun, but watch out, you'll put on the pounds if not careful. it's fine eating.

    3 Year Review. Outstanding Smoker

I've owned this smoker for 3 years now and it has been perfect for my use as an amateur smoker. Webber really nailed it in designing a smoker that holds temps so well. When I say it holds temps well, I mean that once dialed in at the beginning of the cook it will maintain temps for 8-10 hrs reliably. What this means for you....Set that Brisket and pulled pork on the smoker at 10pm and wake up between 6 and 7 to give it a spritz. This really makes it easy for the average joe. Took me about 3 cooks to get the temperature dialed in. Can't say enough good things

Pro Tip: When you place your wood chunks on the coal use fist sized pieces and let it get passed the initial dirty smoke phase before placing your meat on.

Charcoal of Choice: Royal Oak Clump Charcoal.

    Cooking with smoke

It was nice to upgrade to the newer version of weber's smoker. I had an earlier model that lasted me for decades. always an even cook.

Great smoker, holds about 2 chimney of charcoal and can smoke multiple pork butts, fryers, and brisket without having to reload charcoal

I like my Baby Back Baby Back Baby Back Ribs !!

Great for long cooking, I have found it difficult to get up to higher temps. As well keeping it up to temp has been a chore.. Great for long slow cooks though! I love it !

    Good but a little overrated

better than some other brands but is difficult to add charcoal and keep temp up.

If your going to smoke for more than 2-3 hrs you will need to add charcoal and when you do the temp drops allot.

    Game changer!

We've never had a smoker before and this is a good one for beginners like us. We made sure to get high quality charcoal and wood. We also bought a wireless dual probed meat & bbq thermometer that really helps. The smoker is relatively easy to clean.

We started with pork and it turned out really well. After that we got brave and did a beef brisket but we didn't leave it in long enough so we put it in a slow cooker afterwards to tenderize it. Last weekend we had guests so decided to be brave and did another brisket. This time we left it one for much longer, sprayed it with apple cider vinegar, wrapped it in butcher paper and gave it a few more hours. We took it off and let it rest for 2 hours. It was perfect. We're looking forward to experimenting with other meats.

It's a learning curve but this smoker is a game changer!

    What Happened Weber?

I purchased the 18" Weber Smoky Mountain (WSM) smoker July3, 2026, based on the high ratings it had been given by people who had purchased it. I have owned a Weber Genesis II gas grill for six years and have been very satisfied with it's performance and excellent built quality. I excepted the same for the WSM smoker, however, that was not the case. Although the construction of the porcelain coated steel body appears to be sturdy and well made, many of the components such are of inferior quality and below expected performance. To begin, the lid has no hinge, so when ever you need to move food in/out of the smoker you need to find a safe place to place a greasy and hot lid down. The four vents are made from thin aluminum sheeting that easily deforms. The vents also get expectantly hot and because they do not have a non heat-transmitting handle/knob, they get very hot making it difficult to operate. As such I have had to purchase after-market tumb-handles in order to safely operate them. In addition the thermometer is very small and of inferior quality allowing moisture to accumulate inside the glass. This too was replace by an after-market thermometer. The aluminum legs are flimsy, and because they are independent of each other, when ever the smoker is moved to protect against inclement weather, the legs rattle badly. As such, I have had to build a platform that secures all three legs together, and added casters under the platform so that the unit can be moved easily. As for the side access planel, I can only say "SHAME ON YOU WEBER!" this panel is poorly made of flimsy aluminum sheeting that easily bends. and because this panel does not have any perimeter insulating a lot of smoke/heat escapes around the edges. There is a reason why the internet has so many after-market modifications for this smoker, and most of them are not inexpensive. When I started my search for the purchase of a smoker, I discover that there were "endless" choices. In the end, I decided to go with a Weber thinking that their product would be comparable with the Weber gas grill that I own. And for $440, which is what I paid for the basic unit, I expected nothing less. However, the overall quality of this unit have been very disappointing. So far I have spent over $150 in needed modifications just to make the unit safe and easy to operate. That brings the overall cost to approx. $590, and that is an absurd price for what this unit. Sorry Weber, you get a los "D" for this unit. Hope someone in the production/design Dept. revisits the current design of this unit and make the necessary modifications without making the final cost of this unit unaffordable.

    Simply an Amazing Smoker

If you want to learn the art of smoking over coals, then look no farther than the WSM. It's not quite as set it and forget it as my Searwood, but once you have it dialed in this thing is a BEAST when it comes to smoking. All my cooks have had awesome flavor and it is extremely easy to manage the temperature with.

    Goodby offset smoker

I have used an offset successfully for many years. I watched my buddy use his 14" to smoke a brisket and wow! So I got me an 18" and it is so much more simple. Easy to start, regulate, and clean. Absolutely sold.

    Almost perfect…..

The grill lid doesn’t align to the center portion adequately and does require some additional effort to close, if it does. Despite this, The grill performs as expected and holds temp masterfully.

    Advice on the smoky mountain

The smoky mountain is by far the simplest & best smoker one can get for the money. After years of using propane & electric smokers that turned out average results I did my research & started smoking foods on my Weber kettle grill that family & friends raved about. So the next step was to purchase a smoky mountain since purchasing it approximately a month & a half ago I’ve smoked 3 corned beef’s to make pastrami & 4 chickens that friend’s & family have absolutely loved!!! If you’re in the market for a smoker don’t hesitate to get a smoky mountain your taste buds will thank you

Worth the investment - so far

This smoker replaces an older one (>15 years) that rusted out. The 18" Weber is larger than my old one, but I plan to smoke full sized briskets and needed the larger size. Assembly of the legs to the charcoal pan required some modification and balancing act, but the remainder was easy. Inserting the rubber gasket for temperature probes was a problem and the gasket tore - but was replaced by Weber quickly.

So far, I have only smoked chicken wings and they came out perfect. The guide regarding recommended charcoal briquettes was very helpful. Temperature was steady at 250 degrees and the wings were delicious. Can't wait to try it out with a brisket.

    Fantastic!

Excellent! Took two cooks to get the hang of it but makes a smoking rookie feel like a pro. In hindsight I should’ve bought the bigger one because of increased demand since the food turns out so good. Turkey, chicken and ribs have been elevated; going to do brisket once the Canadian winter subsides. Highly recommended for novice users who want to get into the smoking game.

    Smokem if you gottem

Really enjoying the WSM 18 smoker. Most recently smoked a Thanksgiving turkey and it was the best turkey we ever had. The WSM is easy to use and holds a consistant heat even in cold weather and I would highly recommend it.

Its winter.. next day it didnt go as high but that was my fault. held at 290 for a long tiome based on what was in it and then just added a few bricks and went to 315 and held...I just know this is going to be amazing once Its not freezing out

    Great Unit!

I purchased this from a local specialty retailer not too long ago, and have used it a few times before the cold and snow moved in (I live in Ottawa, Ontario). The first time was a little deflating - there is a lot of experience needed with this unit. After that, things went better, and the end product was very good.
