Juha grills year-round: "I have 8 grills in my backyard"

"For me, grilling always starts with a vision of what I want to create. I think about the right ingredients for the idea and choose the grill accordingly. Then I start planning the choreography. I figure out when each dish needs to be served and work backward from there, calculating how much time the grilling and prep will take. I've spent sleepless nights thinking about how to execute everything so my guests aren't waiting two hours for food while starving.

The world of grilling really opened up for me just over ten years ago when I bought my first proper grill, a gas-powered convection Weber 3200. The cooking area is huge and it gets incredibly hot fast. When I started reading and thinking about everything you can do on a grill, I realized, holy cow, grilling is an absolutely massive world!

I soon wanted to try barbecue-style cold smoking too, so I had to get a Weber smoker as well. And pretty quickly I also wanted a portable grill I could take on trips... Things got out of hand immediately."
